Types of Graph Paper
"Graph paper" covers a family of rulings, not one sheet. The plain square grid most people picture is only the starting point: change the spacing, drop the lines for dots, tilt the axes to 30 degrees, bend them into circles, tessellate them into hexagons, or space them logarithmically, and you get a sheet that suits a job the square grid handles badly. Engineering Graph Paper
A square grid with every fourth or fifth line drawn heavier, so you can count large distances at a glance without losing the fine divisions underneath. The standard choice for technical drawing, calculation sheets and dimensioned sketches.

The intersections without the lines. Dots give you the same alignment as a square grid but disappear behind your work, which is why they dominate bullet journaling, sketchnoting and any page you intend to photograph.

Most work starts and ends on the plain square grid, and if you are unsure, start there -- what graph paper is covers where the square ruling came from and what it does well. Reach for a different style when the square grid is actively fighting you: dots when the lines are showing up in your finished work, isometric when you are drawing depth, polar when your subject is circular, hexagonal when adjacency matters more than rows and columns, logarithmic when your data will not fit on a linear scale.
Grid style is only half the decision. The spacing matters just as much, and the two interact -- a 5 mm dot grid and a 5 mm square grid behave very differently under a pen.
